- 1 Butternut squash (peeled and cut into chunks)
- 3 shallots (sliced)
- 4 garlic cloves (smashed)
- 2 Tbsps olive oil
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup dried Cranberry
- 1 pkg vegan Pasta
- fresh parsley (for garnish)

Preparation steps
1.
Preheat oven to 400° F/205° C. Line a baking sheet with foil.

Toss diced squash, shallots and garlic with olive oil, salt and pepper. Spread evenly onto prepared baking sheet and roast for 40 minutes, stirring occasionally.
3.
Meanwhile cook pasta according to package directions. Toss pasta together with roasted squash and dried cranberries. Season with salt and pepper, and garnish with parsley to serve.
