For the caramelized orange slices
1 ⅔ cups water
1 ½ cups sugar
2 Oranges (very thinly sliced)
For the cake
2 cups self-rising flour (sifted)
¼ cup vegan Margarine (softened)
1 cup superfine caster sugar
1 cup Soy milk
¼ cup Orange juice
1 tsp vanilla extract
2 ½ Tbsps Poppy seeds
1 tsp finely grated Orange zest

Preparation steps

For the caramelized orange slices: heat the water and sugar in a pan over low heat until the sugar has dissolved completely. Add the orange slices and bring to a boil.

Reduce the heat, cover and simmer for about 20 minutes, until the oranges are tender. Drain and set aside.

For the cake: heat the oven to 350°F. Butter an 8" deep cake tin.

Press the orange slices into the tin onto the base and sides, overlapping them slightly.

Put the flour, margarine, sugar, soya milk, orange juice and vanilla into a mixing bowl. Beat for 1 minute with an electric whisk until creamy.

Stir in the poppy seeds and orange zest and mix well.

Put into the tin and bake for 50-55 minutes until golden brown and springy to the touch. Test by inserting a skewer or toothpick into the center of the cake - if it comes out clean the cake is cooked.

Remove from the oven and leave to cool in the tin. Turn the cake out so the orange slices are uppermost.

Delicious- I saved the orange syrup from boiling the oranges and poured it over the cake to make it extra nice!
