- 14 ozs Puff pastry
- 4 Tbsps olive oil
- 2 red peppers (diced)
- 2 green peppers (diced)
- 2 yellow Bell pepper (diced)
- 2 garlic cloves (finely chopped)
- 1 Leek (cut into rings)
- 1 tsp dried oregano
- 1 ½ cups Goat cheese (sliced)
- 6 sprigs thyme

Preparation steps
1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and grease a baking tray with oil.
2.
Roll out the puff pastry, place on the prepared baking tray and pierce with a fork.
3.
Mix together the peppers, garlic, leak and the oil and season with salt, ground black pepper and oregano. Spread the vegetables evenly over the pastry leaving a 1 cm edge all the way around.
4.
Place the cheese on top, sprinkle with thyme and bake for around 30 min. Cut into slices and serve either hot or lukewarm.
