- 300 grams Sour cherry
- 2 centiliters cherry schnapps
- 1 Tbsp lemon juice
- Ground cinnamon (for dusting)
- Lemon balm (for garnish)
- For the vanilla cream
- 1 Vanilla bean
- 400 milliliters milk
- 4 egg yolks
- 100 grams sugar
- 20 grams cornstarch
- 1 pinch salt

Preparation steps

Preheat the oven to 200 ° C convection.

For the vanilla cream: slit vanilla pod lengthwise, scrape out seeds and add both to milk. Bring to a boil. Remove from heat and let cool slightly. Beat yolks with sugar in a bowl until creamy. Add cornstarch and mix well. Gradually add warm milk, stirring. Return mixture to the pot, remove vanilla pod and simmer, stirring, on low heat until cream thickens, do not boil. Pour vanilla cream into ovenproof serving ramekins.

Rinse and pit cherries. Drizzle liquor and lemon juice over cherries and let stand for about 10 minutes. Divide cherries between vanilla cream ramekins. Bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes. Sprinkle with cinnamon and garnish with lemon balm. Serve.
