- 4 ½ ozs Dark chocolate (65% cocoa solids)
- 1 ¼ cups all-purpose flour
- ¼ cup cocoa powder
- 1 tsp baking soda
- 1 pinch salt
- ½ cup butter
- ⅓ cup light brown sugar
- ¼ cup caster sugar
- 1 tsp vanilla extract
- 1 egg (beaten)
- 4 cups Vanilla ice cream (softened)

Preparation steps
1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line 2 baking trays with non-stick baking paper.
2.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
3.
Sift the flour, cocoa, bicarbonate of soda and salt into a bowl.
4.
Beat the butter and both sugars in a mixing bowl until light and fluffy. Add the melted chocolate and stir well.
5.
Beat in the vanilla extract and the egg, then mix in the dry ingredients.
6.
Place 12 heaped tablespoons, well apart onto the baking trays.
7.
Bake for about 18 minutes until just firm to the touch. Cool on the baking trays for 5 minutes, then place on a wire rack to cool completely.
8.
Sandwich the cookies in pairs with a large scoop of ice cream. Press down firmly, wrap in cling film and freeze until set.
