cup light brown sugar

1 tsp vanilla extract
2 ¾ cups all-purpose flour
½ tsp Baking powder
1 ⅐ cups Chocolate chip (plain)

Preparation steps

1.
Beat the butter and sugar in a mixing bowl, then mix in the egg and vanilla.

Stir in half the flour and then the chocolate chips. Stir until the chocolate is well mixed, then add the remaining flour until combined. Form into a ball and chill the mixture for 1 hour.

Heat the oven to 190°C (170° fan) 375°F gas 5. Line a large baking tray with non-stick baking paper.

Cut the dough into 30 pieces. Roll into balls and put onto the baking tray.
5.
Bake for 7 minutes. Remove from the oven and press down each ball with the back of a spoon, until slightly spread. Return to the oven for a further 5-7 minutes, until browned.
6.
Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
Sandwich the biscuits in pairs with ice cream.
