Preparation steps
1.
Puree the strawberries in a food processor or blender, then rub through a sieve into a bowl. Squeeze in a few drops of lemon juice.
2.
Whisk the cream and condensed milk in a mixing bowl with an electric whisk until thick.
3.
Fold in the strawberry puree and colouring if using. Spoon into a freezerproof box, cover and freeze for at least 4 hours.
4.
Sandwich the cookies in pairs with the ice cream and serve immediately or return to the freezer until ready to serve.
