- 400 grams small Turnip
- 2 Tbsps butter
- 2 Tbsps sugar
- 100 milliliters Beef broth
- freshly ground peppers
- olive oil (for greasing)
- 300 grams Puff pastry dough
- 1 stem rosemary
Preheat the oven to 200°C (approximately 400ºF).
Peel the turnips and caramelize in a saucepan with the butter with the sugar. Deglaze with the broth. Season with salt and pepper. Cover and simmer for about 15 minutes.
Remove the lid and allow the liquid to evaporate. Leave to cool down.
Grease the baking pan with oil and spread the turnips on the bottom. Roll out the pastry, slightly larger than the pan, and place it on top of the turnips. Press the edges together to seal and prick the surface several times with a fork.
Bake in the oven for about 25 minutes until golden brown.
Remove from the pan, cut into pieces and serve garnished with rosemary.
