1 Sieve, 1 Fork, 1 Small knife, 2 Pots, 1 Measuring cups, 1 Wooden spoon, 2 Bowls, 1 Whisk, 1 Tablespoon, 1 Cutting board

Preparation steps

For the dough, mix the flour with the egg and a little water and knead well to produce a firm dough. Halve the dough, put into a bowl, cover with a cloth or a lid and leave to rest for 30 minutes.

For the filling, peel and finely grate the onion and mix with the minced lamb, parsley, salt, pepper and 3 tsp of the paprika. Roll the dough out very thinly and cut into 3-4 cm squares. Put a little of the mince filling in the middle of each square, pull the corners up over the filling to made a pyramid shape and pinch together. Press the edges together firmly with your fingers.

Bring to the boil a large pan of salted water and cook the dumplings very gently for 5-7 minutes.

For the sauce, peel and press the garlic. Add to the yoghurt and season to taste with a little salt and paprika.

Melt the butter in a frying pan. Put the dumplings into a sieve, refresh briefly in cold water, then drain and toss in the butter. Serve on plates and garnish with parsley. Hand the yoghurt sauce separately.
