2 ripe Apple (such as Boskop)
1 Tbsp lemon juice
4 Turkey cutlets (each 160 grams)
salt
freshly ground peppers
1 Tbsp clarified butter
1 Tbsp finely chopped thyme
250 milliliters Apple juice
250 milliliters Broth
2 Tbsps Crème fraiche
2 Tbsps sauce thickener
1 Tbsp Dijon mustard

Preparation steps

Rinse the apples, cut in half, remove seeds, cut into wedges and drizzle with lemon juice.

Rinse the turkey cutlets, pat dry, season with salt and pepper and cook in hot butter for 3-4 minutes on each side. Remove and wrap in aluminum foil. Add the apples and thyme to the butter and cook for about 2 minutes. Deglaze with the juice and the broth and bring to a boil. Stir in the crème fraîche and gravy thickener and simmer for about 2 minutes. Season with salt, pepper and mustard. Unwrap the turkey cutlets and place back in the sauce. Serve with mashed potatoes as desired.
