- 18 ozs very fresh Tuna (thinly sliced)
- 2 stalks Lemongrass (sliced)
- 4 Tbsps white wine vinegar
- 1 lemon (juice and grated zest)
- ⅔ cup olive oil
- ¼ tsp salt
- 1 shallot (finely chopped)
- 1 Tbsp finely chopped mint

Preparation steps
1.
Put the tuna in a shallow bowl.
2.
Mix together the vinegar, lemon juice, oil and salt and pour over the fish. Scatter with lemon zest, lemongrass, shallot and mint.
3.
Cover and leave to stand for 1 hour before serving.
