- For Salad
- 3 cups organic Baby greens (rinsed and dried)
- 1 small Red onion (peeled and sliced into rings)
- 1 red Bell pepper (washed; seeded and sliced)
- 4 ripe Tomatoes (rinsed and cut into wedges)
- 10 ozs fresh or frozen Green beans (blanched)
- ½ cup pitted, black nicoise olive
- 1 ¼ cups canned Tuna (drained and flaked)
- 4 fresh eggs (hard boiled; peeled and cut into quarters)
- 1 can flat Anchovy fillet in oil; drained (optional)
- ¼ cup fresh parsley (rinsed and chopped)
- freshly ground Black pepper (to taste)
- For Vinaigrette Dressing
- 1 small shallot (peeled and minced)
- 2 tsps Dijon mustard
- ¼ tsp salt
- 1 Tbsp lemon juice (fresh squeezed)
- 1 Tbsp Wine vinegar
- ½ cup top-quality olive oil
- freshly ground Black pepper (to taste)
