- 18 raw mediterranean shrimp
- 1 mini Pineapple
- 1 scallion
- 2 sprigs cilantro
- 1 stalk Lemongrass
- 1 sprig mint
- ½ cup canned Sweet corn
- 0.333 cup Basmati rice
- lemons (juiced)
- salt
- peppers
Preparation steps
1.
Peel the prawns, cut in half widthwise and place in steamer basket. Season, cover and steam for 3 minutes. Set aside.

Peel the pineapple and cut into small triangles. Chop the spring onion, coriander, mint, and lemongrass.

Cook the rice according to instructions on the packet. Drain the sweetcorn.

Mix the prawns, rice, sweetcorn, pineapple, coriander, lemongrass, spring onion and mint together in a

bowl. Add the lemon juice, season, and mix well.
