- salt (to taste)
- 6 ripe Tomatoes
- 2 balls fresh Mozzarella
- ½ bunch fresh parsley
- ½ bunch fresh Basil
- 4 Tbsps olive oil
- 1 ½ Tbsps lemon juice
- freshly ground Black pepper (to taste)

Preparation steps
1.
Cook the pasta in a pot of salted boiling water per package instructions until al dente.
2.
Blanch the tomatoes briefly, plunge into cold water, trim, peel, quarter, remove seeds and dice.
3.
Drain the mozzarella and chop into bite-size pieces.
4.
Rinse the parsley and basil and shake dry. Pluck the leaves from the stalks, reserving a few basil leaves for garnish. Finely chop the remaining plucked leaves.
5.
In a small bowl, combine the chopped herbs, olive oil and lemon juice.
6.
Drain the pasta, combine pasta, tomatoes and mozzarella in a large bowl. Drizzle with herb dressing, season with freshly cracked pepper. Toss to coat and divide between bowls. Serve.
