- 1 cup Smoked salmon
- ½ lemon (juiced)
- 1 cup Buffalo mozzarella (drained and sliced thinly into discs)
- 2 cups Spinach (washed)
- salt
- peppers
- cherry Tomatoes (quartered, to garnish)
Preparation steps
1.
Dress the smoke salmon slices with lemon juice and pepper.

Build the lasagnes (making 2 of them) by layering smoked salmon, then discs of mozzarella on top.
3.
Follow with an even layer of spinach, then more smoked salmon and mozzarella. Top with a spinach layer, then smoked salmon and follow with mozzarella.
4.
Arrange spinach on top, then the rest of the smoked salmon.
5.
Cut in half through the middle diagonally as you would a sandwich.
6.
Arrange on serving plates and garnish each half with a final spinach leaf and a quarter of cherry tomato before serving.
