- 10 cups fresh or cooked Penne
- 4 cups canned Tomatoes (with onions and herbs)
- 1 handful baby Spinach
- 1 Tbsp chopped parsley
- 1 cup fresh Mozzarella (sliced)
- ½ cup grated Parmesan

Preparation steps
1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
2.
Place the penne, tomatoes, spinach and parsley in an ovenproof dish and mix well.
3.
Lay the mozzarella slices on top, scatter over the Parmesan and bake in the oven for 20 minutes.
