- 1 Tbsp olive oil
- 4 large, firm Tomatoes (cut into 20 slices)
- 2 ¼ cups fresh Mozzarella (cut into 20 slices)
- 6 large Basil (torn)
- 1 Tbsp balsamic vinegar
- 2 tsps black peppercorns (crushed)
- 1 Tbsp extra virgin olive oil
- To garnish
- Arugula (leaves)

Preparation steps
1.
Heat the oil in frying pan and add the tomatoes and cook for 1 minute on each side. Remove and set aside.
2.
Cook the Mozzarella slices for 1 minute on each side.
3.
Layer the tomato and Mozzarella slices to form 4 'towers'
4.
Place on serving plates.
5.
Whisk the basil, vinegar, peppercorns and oil and drizzle over the 'towers'. Garnish with rocket.
