- 3 large, vine ripened Heirloom tomato (rinsed)
- 8 ozs fresh Mozzarella (sliced into rounds)
- ½ cup pitted, chopped Olives (green or black)
- 2 cloves garlic cloves (peeled and minced)
- 8 ozs sun-dried tomato bruschetta
- 8 Basil (julienne; plus extra for garnish)
- ¼ cup good-quality olive oil
- salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Slice the tomatoes and mozzarella in equally thick round slices.
2.
In a small bowl, mix half of the olives, garlic and bruschetta together. Stack tomato and mozzarella slices on individual plates. Top with tapenade and sprinkle with basil, drizzle with olive oil and season to taste with salt and pepper.
3.
Garnish each stack with a few fresh basil leaves. Serve.
