- 11 ozs Puff pastry (sheets)
- 1 egg yolk (beaten)
- For the topping
- 4 ½ cups ripe Tomatoes (cut into wedges)
- 1 Tbsp olive oil
- 1 ½ cups Mozzarella (sliced)
- 1 Tbsp balsamic vinegar
- 2 Tbsps olive oil
- salt
- peppers
- ½ tsp dried oregano
- 2 Tbsps chopped Basil

Preparation steps
1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a baking tray.
2.
Lay the puff pastry sheets on top of one another and roll out thinly on a floured surface. Cut 6 rectangles of about 8 x 10 cm |3" x 4". Cut out strips 1 cm|1/2" wide from the scraps of pastry.

Brush the edges of the rectangles with the egg yolk. Stick the remaining pastry strips on the edges to form a rim. Place on the baking tray.

Spread the tomatoes and mozzarella over the pastry bases, sprinkle with balsamic vinegar and oil, and season with salt and pepper. Scatter with oregano and finely chopped basil.
5.
Bake for about 15-20 minutes until golden. Serve immediately, garnished with basil leaves.
