- 14 ozs Puff pastry
- 2 Tbsps olive oil
- 12 Cocktail tomatoes (halved)
- ⅔ cup black Olives (pitted, chopped)
- ⅔ cup Halloumi cheese (chopped)
- parsley (to garnish)
Preparation steps
1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with greaseproof paper.
2.
Roll out the pastry approx. 4-5 mm thick if required and cut out small circles (approx. 10 cm in diameter) and place on the prepared baking tray. Brush with oil.
3.
Mix together the tomatoes, olives and cheese. Place on top of the pastry circles leaving a narrow edge free. Drizzle with a little oil, season with salt and ground black pepper and bake for around 15 minutes. Serve garnished with parsley.
