500 grams starchy potatoes

80 milliliters milk
20 grams butter
freshly ground peppers

2 Panini (or flat bread)
4 Quail egg
1 Tbsp butter
sweet ground paprika
1 thin slice Chorizo
scallions (for garnish)

Preparation steps

1.

Peel and rinse the potatoes, cut into quarters and cook for 25-30 minutes in salted water until soft. Drain, let the water evaporate and press through a potato ricer. Stir in the milk and the butter and season with salt, pepper and nutmeg.

Halve the bread and toast in a toaster or under the broiler.

3.

Break the quail eggs into a pan with some butter and fry for 2-3 minutes. Season with salt, pepper and spices.

Cut the chorizo into thin strips.

4.

Cut a ring from the toast using a cooking ring and spoon a layer of mashed potatoes onto it. Place a fried egg on top and then remove the ring. Repeat for the remaining ingredients.

Serve garnished with chorizo and chives.
