Toasted Italian Egg Sandwich
Preheat the oven for 220°C (200° fan) | 425F | gas 7.
Toast the bread and melt the butter in a small frying pan at the same time. Scramble until set and season with salt and pepper.
Lay cheese on 4 slices of toast, spread with the scrambled egg, put 1 - 2 sage leaves on the egg and finish off each slice of toast with a slice of cooked ham.
Pile the slices of toast with their toppings on top of each other and finish off with the remaining slice of toast.
Secure with a wooden cocktail stick and put into a preheated oven for a few minutes, until the cheese begins to melt. Serve immediately.
