250 grams Basmati rice
salt
4 Grouper fillet (skinless each 180 grams)
2 Tbsps Fish sauce
2 Tbsps Lime juice
1 tsp brown sugar
2 Tbsps sesame oil
1 Tbsp Red Curry paste
300 milliliters Coconut milk
soy sauce
1 Red Bell pepper
2 Tbsps freshly chopped cilantro

Preparation steps

Rinse rice in a sieve and boil in a pot with two parts of salted water. Cover and cook for about about 20 minutes over low heat.

Preheat the oven broiler.

Rinse grouper fillets and pat dry. Mix fish sauce in a bowl with lime juice, sugar and a little oil. Cover grouper fillets with lime juice mixture and then place on a baking sheet lined with parchment paper. Cook under the preheated oven broiler for about 10 minutes, watching carefully and turn over once.

For the sauce, fry curry paste in a saucepan with remaining oil and then add coconut milk. Let simmer until creamy and season with soy sauce.

Rinse bell pepper, cut in half, remove seeds and ribs and cut into small cubes. Add bell pepper to the rice during the last 3-4 minutes of the cooking time.

Serve fish and rice on plates covered with sauce and garnish with cilantro leaves.

7.

If desired, serve with a fresh green salad.
