- 1 Tbsp light sesame oil
- 1 onion (finely sliced)
- 2 cloves garlic cloves (chopped)
- fresh ginger (waltnut-sized, chopped)
- 1 stalk Lemongrass (finely chopped)
- 2 red chili peppers (deseeded and cut into strips)
- 1 ½ cups chicken stock
- 1 ⅔ cups Coconut milk
- 2 Chicken breasts (skinned and cut into chunks)
- 6 Lime leaves
- 2 Tbsps light soy sauce
- 1 Tbsp Fish sauce
- 1 tsp sugar
- 1 Lime (juiced)

Preparation steps
1.
Heat the oil in a large pan and gently fry the onion until soft but not brown.
2.
Add the garlic, ginger, lemongrass and chilli and cook for 1 minute.
3.
Add the stock and coconut milk, bring to a boil then add the chicken and lime leaves and simmer for 15 minutes.
4.
Add the soy sauce, fish sauce, sugar and lime juice, heat through and serve.
