- ⅔ cup self-rising flour
- 2 Tbsps caster sugar
- 2 eggs
- 2 Tbsps Maple syrup (plus extra to serve)
- ½ cup milk
- 2 Tbsps butter (melted)

Preparation steps
1.
Sift the flour into a mixing bowl and stir in the sugar. Add the eggs, maple syrup and milk and beat well to a thick batter. Gradually beat in the melted butter.

Grease a griddle or frying pan and heat until hot.

Pour about 1 tablespoon of batter onto the griddle to make an 8-10cm|3"-4" round and cook over a medium heat for about 1 minute until bubbles form on the surface. Gently turn over and cook the other side for about 30 seconds until golden. Repeat with the remaining batter.
4.
Wrap the cooked pancakes in a clean tea towel to keep them soft. Serve with maple syrup.
