- 4 Swordfish fillet (about 6 oz each)
- 1 Tbsp Lime juice
- 3 Tbsps olive oil
- 1 small Pineapple
- 2 Tomatoes
- 1 onion
- 3 stalks cilantro
- salt
- peppers
Preparation steps

Peel the pineapple, cut into quarters lengthwise, cut out the core and finely dice the flesh.

Cut a cross into the tomatoes, drop into boiling water for a few seconds, skin, remove the seeds and finely dice. Peel and finely dice the onion. Mix all the diced ingredients, season with salt and pepper and leave to stand for 10 minutes.

Wash the fish, dab dry, sprinkle with lime juice, season with salt and pepper and brush with oil. Grill for 2 - 3 minutes each side.

Serve on plates, spoon a little salsa on to each piece of fish, and garnish with coriander leaves.
