1 cup butter
1 cup caster sugar
4 eggs (beaten)
½ tsp vanilla extract
2 Tbsps milk
2 ¾ cups self-rising flour
1 ½ Tbsps cocoa powder
2 Tbsps hot water

Preparation steps

Heat the oven to 160°C (140° fan) 325°F gas 3. Grease a 900g|2lb loaf tin and line the base with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until soft and creamy. Gradually beat in the eggs, vanilla and milk until blended. Sift in the flour and stir in gently. Spoon half the mixture into another bowl and set aside.

In a small bowl, mix the cocoa powder and hot water together until smooth. Allow to cool slightly, then add to one of the bowls of cake mixture, mixing well until evenly blended.

Spoon the vanilla and chocolate cake mixtures randomly into the tin and gently level the surface. Bake for 50-60 minutes, until the cake is well risen, springy to the touch and beginning to shrink away from the sides of the tin. Allow to cool in the tin for a few minutes, then turn out onto a wire rack to cool completely. Sift over a little icing sugar just before serving.
