- 100 grams Frozen raspberry
- 3 egg whites (100 grams or 3 1/2 ounces)
- 1 tsp lemon juice
- 200 grams sugar
- Lemon peel
- 200 grams peeled, finely ground almonds
- 50 grams breadcrumbs

Preparation steps
1.
Thaw raspberries.
2.
Preheat oven to 140°C (approximately 275°F). Line a baking sheet with parchment paper and line it with thin wafer cookies.
3.
Puree raspberries and strain through a sieve.
4.
Beat egg whites with lemon juice and sugar until shiny and cut resistant. Fold in almonds, lemon zest, breadcrumbs and raspberry puree.
5.
Put mixture into a piping bag and pipe on top of thin wafer cookies. Bake carefully until wafers are light yellow in color, about 25-30 minutes. Cool, remove raspberry kisses from wafers and serve.
