Sweet Spring Roll with Apple

- 20 pramade Dough (for spring rolls)
- 4 green Apple
- 2 Plum
- 4 Tbsps Palm sugar
- 4 Tbsps Coconut milk
- 4 Tbsps Shredded coconut
- 2 Limes (juice)
- vegetable oil (for cooking)
- Fruit syrup (or juice concentrate)
Preparation steps
Halve apples, peel, remove core and cut into small cubes. Sprinkle with lime juice. Rinse plums, cut in half, remove pits, cut into small cubes. Toast coconut in a dry pan until browned. In a saucepan, simmer palm sugar and coconut milk over low heat until the sugar has completely dissolved. Add apples and plums and cook briefly (do not allow apples to become mushy). Remove from the heat and stir in grated coconut.
Thaw spring roll dough. Lay sheets on the work surface and place 2 tablespoons filling in the center of each piece of dough. Fold in the two opposite sides, then roll tightly.
Heat vegetable oil in a pan or wok. (The oil is hot enough when small bubbles appear when a wooden spoon is dipped into the oil.)
Fry rolls in hot oil about 3 minutes, until golden brown. Drain on absorbent paper. Serve warm with fruit syrup.
