- Saffron
- 2 ½ cups Paneer (Indian cream cheese)
- 2 tsps lemon zest
- 1 Vanilla bean (seeds scraped out)
- 2 egg whites
- 5 Tbsps sugar
- ⅞ cup whipping cream (at least 30% fat)
- 1 cup blanched almonds
- 1 cup Pistachio (finely chopped)

Preparation steps
1.
Mixed together a pinch of saffron powder with 1-2 tbsp boiling water. To make the dumplings, purée the cheese with a hand blender and then mix with the saffron water, lemon zest and the vanilla seeds.

Beat the egg whites with a pinch of salt until stiff. Gradually add the sugar and fold into the cheese mixture. Cover and chill for around one hour. Whip the cream and set aside in the fridge.

Dissolve two pinches of saffron in 3-4 tbsp boiling water and mix with the almonds. Steep for around 10 min and leave to cool, preferably in the fridge.

To serve, used to damp spoons to scoop large dumplings out of the cheese mixture. Arrange these on plates and top each one with the cold cream and the saffron almonds. Garnish with the pistachios.
