- 11 ozs Puff pastry
- 42 ozs Sweet potato (cut into chunks)
- 1 Orange (juice)
- 1 tsp ground cinnamon
- 2 Tbsps Maple syrup
- ⅓ cup sugar
- 2 Tbsps cream

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and butter a casserole dish.
2.
Line the dish with around 2/3 of the pastry. From the remaining pastry, make strands for the lattice top.
3.
Mix the potatoes with the orange juice, cinnamon, maple syrup and 50 g sugar, and spoon into the pastry case. Top with a pastry lattice. Gently fold the edges of the pastry over the lattice and press down firmly. If desired, crimp the edge of the pie with a fork.
4.
Brush the pastry with cream and sprinkle with the remaining sugar. Bake in the oven for approx. 50 minutes until golden brown.
5.
Serve with custard, if desired.
