100 milliliters Whipped cream
250 grams softened butter
50 grams sugar
3 eggs
400 grams Pastry flour
100 grams ground almonds (blanched)
1 teaspoon ground ginger
1 generous pinch Mace
1 teaspoon Baking powder

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Grease loaf tin with butter and sprinkle with ground almonds.

Heat honey and cream in a small saucepan and allow to melt. Cool.

Cream butter with sugar until light and fluffy. Gradually add eggs. Mix flour with almonds, ginger, nutmeg and baking powder. Stir into egg mixture, alternating with honey and cream. Mix into a smooth dough. Place in loaf tin and smooth. Bake for 50 minutes or until toothpick inserted in center comes out clean.

Cool on a wire rack. Before serving, cut into slices and spread on butter to taste.
