- 1.333 cups caster sugar
- ⅔ cup water
- ¼ cup unsalted butter (cubed)
Preparation steps
1.
Combine the sugar and water together in a deep-sided saucepan.
2.
Heat over a medium heat, swirling the mixture occasionally to help dissolve the sugar.
3.
Continue to heat until the sugar reads 132°C | 270F on a sugar thermometer.
4.
Remove from the heat and add the butter, swirling again to help it dissolve. Pour into a silicone tin and allow to cool and harden.
5.
Turn out onto a chopping board once set and cut into chunks. Serve on plates.
