- For the berries
- 8 sprigs Elderflower
- 1 egg (separated)
- ¾ cup dry white wine
- ¾ cup flour
- 1 Tbsp sugar
- 1 tsp Vanilla sugar
- ½ tsp grated Orange zest
- 2 Tbsps melted butter
- Oil (for frying)
- For the cream
- 1 cup double cream (at least 30% fat)
- 1 Tbsp Vanilla sugar
- In addition
- powdered sugar (to garnish)

Preparation steps
1.
Mix together the egg yolk, wine, flour, sugar, 1 tsp vanilla sugar and the orange zest. Stir in the butter and leave to rest for 20 min.

Beat the egg white with a pinch of salt and fold into the batter. Drag the sprigs of flowers through the batter and fry one after the other in hot oil, heated in a wide-sided frying pan.
3.
Beat together the cream and 1 tbsp vanilla sugar.
4.
Remove the flowers from the fat and pat dry with kitchen paper. Dust the flowers with icing sugar and serve with the cream.
