1 can Apricot
250 grams potatoes
125 grams raisins
75 grams butter
50 milliliters lukewarm milk
175 grams Pastry flour
Yeast
20 grams sugar
1 pinch salt
zested 1 lemon lemons
2 eggs

Preparation steps

For the cake: Drain apricots well in a sieve. Soak raisins in apricot juice for about 1 hour. Scrub potatoes and cook in salted water until tender. Drain and peel. Heat butter and milk briefly. Combine flour, yeast, sugar, salt, lemon zest, eggs, milk and butter and knead into a smooth dough. Press potatoes through a ricer and add to dough. Cover and let rise in a warm place for 1 hour.

Cut apricots into fine strips, drain raisins and add to the dough. Line greased baking pan with dough and brush cake with milk, sprinkle with cinnamon and sugar. Bake in preheated oven at 200°C (gas 3) (approximately 400°F) for about 20-25 minutes. Remove from the oven and brush with melted butter, sprinkle with sugar and cinnamon and serve.
