- 4 leaves gelatin
- 18 ozs Wild Strawberries (plus extra to decorate)
- 2 Tbsps lemon juice
- ⅓ cup xylitol
- 1 cup Greek yogurt
- 1 ¼ cups cream (48% fat)
- To decorate
- toasted slivered almonds

1 Pot, 1 Casserole dish, 1 Bowl, 1 Measuring cups, 1 Tablespoon, 1 Teaspoon, 1 Whisk, 1 Citrus juicer, 1 Small knife, 1 Cutting board, 1 Ladle
Preparation steps
1.
Soak the gelatine in a small bowl of cold water for 5 minutes.
2.
Place the strawberries and lemon juice in a food processor or blender and blend until smooth.
3.
Put into a pan and stir in the xylitol. Heat gently until the xylitol dissolves. Remove from the heat.
4.
Squeeze the excess water from the soaked gelatine leaves and add to the strawberry mixture. Stir well until dissolved, then set aside to cool.
5.
Whisk the yoghurt into the strawberry mixture.
6.
Whisk the cream until thick and fold into the strawberry mixture until blended.
7.
Spoon into serving glasses and decorate with wild strawberries and flaked almonds.
