- 1 ⅓ cups 2% milk
- 1 Vanilla bean
- 4 egg yolks
- 6 Tbsps xylitol
- 1 tsp Corn starch
- 1 ⅓ cups cream (38% fat)
- 1 cup Candied fruit (chopped)

Preparation steps
1.
Put the milk into a heavy-based pan. Slit the vanilla pod open and add to the milk. Bring to a boil, then immediately remove the pan from the heat. Leave to stand for 15 minutes.

Remove the vanilla pod and bring the milk to a boil.

Whisk together the egg yolks, xylitol and cornflour until thick and foamy.

Gradually whisk in the milk and return to the pan. Cook over a low heat, stirring constantly until thickened.

Pour into a bowl, cover the surface with cling film and leave to cool. Chill until cold.

Whisk the cream until thick, then gently fold into the custard until blended.

Churn in an ice cream machine according to the manufacturer's instructions. Add the candied fruits and churn for 5-10 minutes.

Alternatively, pour into a freezerproof container and freeze for 4 hours, beating with a fork after 2 hours, to break up the ice crystals.
9.
Stir the candied fruits into the ice cream and freeze for 2-3 hours until firm.
