- ⅞ cup milk
- 3 egg yolks
- 2 Tbsps xylitol
- 0.167 cup all-purpose flour
- ½ tsp vanilla extract
- 1 ⅓ cups cream (48% fat)
- 11 ozs mixed Berry (raspberries, sliced strawberries, blueberries, blackberries)

Preparation steps
1.
Heat the milk in a pan until almost boiling. Remove from the heat.
2.
Whisk the egg yolks, xylitol and flour until smooth, then gradually whisk in the hot milk. Return to the pan, bring to a boil stirring constantly, then simmer for 5 minutes until thickened. Pour into a bowl, cover the surface with cling film and chill for 1 hour.

Whisk 100ml|4 fl oz of the cream until thick and fold into the custard.
4.
Layer the custard and berries in 4 serving glasses, ending with berries.
5.
Whisk the remaining cream until thick and spoon into a piping bag.
6.
Pipe a swirl on top of each glass and decorate with kiwi fruit slices and mint leaves.
