1 stale Bread roll
1 onion (chopped)
clarified butter (for frying)
1 bay leaf
4 cups ground Meat (a mixture of pork, beef or veal)
1 egg
1 tsp thyme (chopped)
1 tsp rosemary (chopped, plus extra to garnish)
1 tsp Mustard

Preparation steps

Soak the bread roll in warm water.

Sweat the onion in a little clarified butter with the bay leaf until the onion is soft, but not browned. Remove the bay leaf and mix the onion with the squeezed-out bread roll, the mince, egg, mustard, herbs, salt and pepper. Mix well to combine the ingredients thoroughly.
3.
With wet hands form small meatballs and fry slowly on all sides in clarified butter for about 10 minutes. Garnish each meatball with a small sprig of rosemary before serving.
