9 ozs day-old Bread roll (or white bread)
1.333 cups milk
cup grated Gruyere (e. g. an Alpine cheese, finely diced)
1 Tbsp butter
1 onion (very finely chopped)
0.333 cup Bacon (chopped)
1 sprig rosemary (leaves picked and finely chopped)
4 sprigs parsley (leaves picked and finely chopped)
1 egg
Nutmeg (freshly grated)
clarified butter (for frying)
rosemary (to garnish)

Preparation steps

1.
Slice the roll into thin slices, put in a bowl and pour over the warmed milk. Leave to soak for around 20 minutes.

Heat the butter in a frying pan. Fry the onion and bacon, then add the rosemary and fry together briefly. Take off the heat and stir in the parsley, then leave to cool slightly.
3.
Once cooled, add to the soaked bread together with the egg and season with salt, ground black pepper and nutmeg. Mix together well. With wet hands, shape the mixture into small dumplings.
4.
Heat the clarified butter and fry the dumplings on all sides for approx. 10 minutes until golden brown. Arrange on a plate and serve garnished with rosemary.
