Stuffed Zucchini Rolls
Cut zucchini lengthwise into thin slices and coat with a mixture of flour, salt, pepper and thyme. Heat oil in a pan and cook zucchini slices until golden yellow on both sides. Drain on paper towels.
Crumble feta. Rinse and halve peppers, remove seeds and ribs and cut into fine strips. Peel and finely chop shallot, mix with crushed garlic, herbs and cheese.
Arrange cheese mixture on zucchini slices and roll up, tie with chives. Arrange on plates and sprinkle with chopped garlic and olives. Season with pepper, sprinkle with lemon juice and olives and serve.
