4 shallots
1 sm stalk Leeks
2 Tbsps butter
10 grams dried Morel
salt
freshly ground peppers
½ tsp thyme (chopped)
½ tsp rosemary (chopped)
8 Wild boar loin (each around 80 grams) (approximately 3 ounces)
2 Tbsps clarified butter
2 Tbsps Pastry flour

Preparation steps

1.

Soak the morels in cold water for about 1 hour. 

2.

Peel the shallots and chop very finely. Rinse the leek, trim and mince the white and light green parts. Remove the morels from the soaking water and rinse thoroughly under running water. Mince. 

3.

Heat the butter in a pan, sweat 1/2 the shallots, the morels and leeks for about 3 minutes. Season with salt and pepper, remove from the heat and let cool.

Cut a pocket in the side of each steak, stuff with the filling and secure with toothpicks. Season with salt and pepper, coat with flour and sauté in hot butter for about 2 minutes per side over high heat, until seared. 

5.

Add the remaining shallots and chopped herbs, season with salt and pepper and cook the meat for 2-3 minutes per side over medium heat, or until cooked to your liking. Serve with potatoes, if desired.
