4 Tbsps Mascarpone

1 Romaine lettuce

Preparation steps

1.

Rinse tomatoes, pat dry, cut in half and scrape out some of the flesh with a spoon.

2.

Mash the blue cheese with a fork and stir in lemon juice and mascarpone. Season with salt and pepper.

3.

Separate lettuce into leaves, rinse, cut in half and line the tomato halves with some of the leaves. Fill tomatoes with the cheese mixture. Sprinkle tomatoes with thyme and top each with an olive. Arrange on a plates with remaining lettuce leaves.
