For the stuffing
3 tart Apple
1 Tbsp sugar
1 organic lemon (zested and juiced)
100 grams breadcrumbs
salt
freshly ground peppers

clarified butter (for cooking)
700 grams small Pumpkin
3 tart Apple
300 milliliters Beef broth

Preparation steps

1.

For the stuffing: peel apples, halve and core, cut into wedges. Combine with sugar, lemon juice, zest and breadcrumbs. Season meat inside with salt and pepper, place stuffing on lower rib piece and fold meat. Tie with a kitchen string. Heat clarified butter in a roasting pan and sear meat on all sides. Add broth to the pan and roast, covered, in preheated oven at 180°C (approximately 350°F) for about 60 minutes.

Peel pumpkin and core apples, cut everything into bite-sized pieces or wedges. Arrange around meat.

Continue roasting for another 30 minutes, uncovered.

Slice meat and serve with pumpkin and apples.
