- For the stuffing
- 2 White rolls
- 60 milliliters milk
- 2 eggs
- 100 grams raw ham (diced)
- ½ bunch Chives (cut in rolls)
- 1 thyme (leaves plucked)
- 100 grams Chestnut mushroom (finely chopped)
- Nutmeg (freshly grated)

- 100 grams butter
- thyme (For garnish)

Preparation steps

Preheat oven to 220°C (approximately 430°F.)

For the stuffing: Cut rustic roll into small cubes and soak in bowl with milk. Then squeeze out and blend with eggs, ham and mushrooms into a solid mass. Season well with salt, pepper and nutmeg. Fill chicken with stuffing and tie shut using kitchen twine.

For the chicken: Heat 1-2 tablespoons clarified butter in roasting pan, place chicken in pan and cook for about 70 minutes in preheated oven. Let butter melt in small pot, season with pepper and brush mixture over chicken frequently during cooking using 2-3 thyme stalks tied together as brush.
