¼ cup good-quality olive oil
1 onion (peeled and finely chopped)
4 cloves garlic cloves (peeled and thinly sliced)
3 Tbsps fresh thyme (finely chopped)
4 cups crushed Tomatoes
salt (to taste)
freshly ground Black pepper (to taste)
10 cups fresh Tortellini (cheese or meat filling)
fresh Parmesan (grated)
fresh Basil (for garnish)

For Tomato Sauce:

In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until soft and golden, about 8 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the thyme and cook for 1 minute. Add tomatoes and their juices and bring to a boil, stirring often so the bottom doesn't catch. Reduce heat and simmer for 30 minutes, until thick.

Meanwhile, cook the tortellini according to the package instructions in salted boiling water until al dente. Drain well.

Divide tortellini between servings bowls. Season the sauce with salt and pepper and ladle over pasta. Sprinkle with Parmesan cheese and garnish with fresh basil. Serve.
