8 Prince mushrooms (or other wild mushrooms)
1 shallot
1 garlic clove
2 Tbsps dried, pickled Tomatoes (in oil)
3 slices Ciabatta
1 scoop Mozzarella (125 grams)
2 Tbsps roasted Pine nuts
1 Tbsp thyme
salt
freshly ground peppers
4 Tbsps freshly grated Parmesan

Preparation steps

1.

Preheat the oven to 220°C (approximately 425°F).

Trim mushrooms, remove stems and cut stems into slices. 

3.

Peel shallot and garlic and chop finely. Drain tomatoes and chop finely. Remove bread crust and cut into small cubes. Drain mozzarella and cut into small cubes as well.

In a pan heat 2 tablespoons oil and sauté shallots with garlic. Add bread cubes, mushrooms and tomatoes and sauté briefly. Remove from heat and let cool. Add pine nuts, mozzarella and thyme, mix and season with salt and pepper.

5.

Fill mushrooms with the mixture, sprinkle with Parmesan cheese, put on a baking sheet lined with parchment paper and bake in the preheated oven until golden brown. Remove and serve immediately.
