For the stuffed turkey
1 young Turkey (approx 3 kg)
salt

9 ozs Ground veal
9 ozs ground pork
2 onions (chopped)
1 cup chopped parsley
½ cup butter
2 Bread roll
milk (for soaking)
0.333 cup ground Hazelnuts
3 eggs
1 Tbsp dried marjoram
½ tsp Coriander
½ tsp peppercorns
½ tsp Caraway
For the trimmings
35 ozs potatoes
1 tsp chopped rosemary
21 ozs Sausage
4 slices Bacon
28 ozs Brussels sprouts
salt (freshly ground)
peppers (freshly ground)
2 Tbsps Cranberry (fresh or pickled)

Preparation steps

1.
Heat the oven to 180°C ( 160° fan) 375° F gas 4.
2.
Wash the turkey and pat dry. Season with salt and pepper inside and out.
3.
Heat 2tablespoons butter and gently fry the onion.
4.
Soften the rolls in the milk, squeeze out as much moisture as possible. Tear the rolls into pieces and sauté them briefly with the onion and add the parsley.
5.
When cool, mix with the meat, hazelnuts, eggs and spices (salt, pepper and marjoram). If necessary, add more spice to taste.
6.
Stuff the turkey with the mixture and truss. Cover the turkey loosely with foil and place in the oven (lowest rack). Roast for 2-2 1/2 hours. Baste the turkey occasionally during roasting with the reserved butter. If necessary, water may added.
7.
Remove the foil 45 minutes before taking the finished turkey from the oven.
8.
Crush the coriander, peppe corns and caraway in a mortar. Sprinkle over the turkey.
9.
For the trimmings: peel and quarter the potatoes. Mix with the rosemary and some salt.
10.
Wrap the sausages in the bacon slices.
11.
Slice the Brussesl sprouts in half.
12.
During the last 30-40 minutes of the roasting time, place the trimmings around the turkey.
13.
To serve: put everything on a platter and garnish with the cranberries.
