- 4 cooking Apple
- 1 tsp lemon juice
- ¾ cup chopped Walnut
- 2 Tbsps raisins
- 4 tsps Rum
- 2 Tbsps cream (48% fat)
- 1 tsp brown sugar
- 1 egg white
- 2 Tbsps powdered sugar
- 1 pinch ground cinnamon
- 1 ¾ ozs Gingerbread (finely crumbled)
- For the topping
- 5 ozs Dark chocolate (70% cocoa solids, chopped)
- 2 Tbsps cream (48% fat)

Preparation

1 Cutting board, 1 Small knife, 1 Small plate, 1 Salad spinner, 1 Large knife, 1 Tablespoon, 1 Wok oder große Pfanne, 1 Wooden spoon, 1 Teaspoon, 1 Paper towel
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a baking dish.

Core the apples and cut off the top third. Brush the flesh with lemon juce.

Mix together the walnuts, raisins, rum, cream and brown sugar. Place the mixture into the apples and place in the baking dish.

Whisk together the egg white, icing sugar and cinnamon until stiff, then fold in the gingerbread.
5.
Spoon on top of the filling, replace the apple tops and bake for about 30 minutes until tender.

For the topping: melt the chocolate and cream in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and stir once. Set aside to cool slightly.
7.
Place the baked apples on serving plates and serve with chocolate sauce.
