Sometimes you have to pamper your loved ones - here comes the strawberry panna cotta just right! Fresh strawberries not only look good, they also provide plenty of vitamin C. Great for our immune system. The pannacotta is prepared on top with whipped cream and milk. In contrast to the classic version, this is easy on our calorie account.

Why doesn't the pannacotta get firm? In order for the pannacotta to get firm, the gelatine must first be soaked in cold water for 5-10 minutes before it is added to the milk-cream mixture in the pot. The milk-cream mixture should still be hot, but as soon as the gelatine is added, do not bring it to the boil. Otherwise the structure of the gelatine is destroyed and its gelling ability is gone.

1 Vanilla bean
300 milliliters Whipped cream
200 milliliters milk
60 grams sugar
100 grams Strawberries (such as wild strawberries)
Lemon balm (for garnish)

Preparation steps

Soften the gelatin in cold water. Cut the vanilla bean in half lengthwise and boil with the cream, the milk and the sugar. Remove from heat and stir in the well squeezed gelatin. Allow to cool for about 10 minutes and remove the vanilla bean. Pour the vanilla cream into four glasses fill and chill at least 4 hours, covered, until cold.

Rinse the strawberries, pat dry and place on top of the panna cotta. Serve with lemon wedges.
